Renaming a track through Ctrl-r / Cmd-r shouldn’t require to press Enter to save the new name. It should be enough to either click anywhere to confirm. This behavior already exists for the track name field in the Inspector Panel.
Also, the tab key could apply the renaming, jump to the next track and open the renaming textbox.
What problem(s) would this feature resolve?
Currently, when the user renames a track and clicks anywhere outside the textbox, the renaming is canceled. Tab doesn’t do anything. You have to hit enter for the renaming to be applied.

Bitwig aims to offer a quick workflow. This request would improve the setup workflow for projects.

Not exactly. You can use the track name box in the inspector channel, but it doesn’t have an access through a shortcut like renaming on the track has.
